Celery Stew

Celery stew is the only popular Iranian dish with celery. This stew is made from beef, celery, red beans and served together with steamed rice. You will forget about other celery recipes after tasting this delicious stew.

If you like to know how rich this stew is let us tell you that celery is a good source of vitamin K, Vitamin A, Vitamin C, folate, potassium and calcium. Celery is rich in useful antioxidants, phytonutrients and flavonoids that are very effective in preventing inflammation in the lung, prostate, gum and brain cells and prevent the growth of stomach inflammation bacteria. It contains a minimal amount of protein, fat and carbohydrates that are added to this delightful stew through other ingredients.

 

What are the Ingredients?

  • 1 large onion
  • ½ kilo chuck cubes
  • ¼ cups Canola oil
  • 200 grams celery leaves
  • 400 grams fresh celery stalks
  • 50 grams fresh mint
  • 150 grams fresh parsley
  • 1 cup red kidney beans, cooked
  • 1 teaspoon ground turmeric
  • Salt and ground black pepper to taste
  • 4 dried limes
  • 1 tablespoon tomato paste
  • 1 ½ cups water, or more as needed

How to prepare Celery Stew?

Step 1: Preparing Meat

Dice the onions. Heat 2 tablespoons of oil in a separate large pot over medium-high heat. Cook and stir until deep golden brown, 10 to 15 minutes. Stir in the turmeric, salt and pepper for 1 to 2 minutes. Add chuck cubes; fry until coated in turmeric and browned on all sides, 5 to 10 minutes. Add water and let it cook.

Step 2: Preparing Celery

Remove the leaves of celery. Chop the stalks and cook them in a pot until half-cooked. Add to stew.
Chop the celery leaves together with mint and parsley. Heat 2 tablespoons of oil in a pot over medium heat. Add the chopped leaves; fry and stir until deep dark green in colour, 5 to 10 minutes. Add to stew.

Step 3: Cook

Pierce dried limes with a fork; add to the stew. Continue simmering until chuck is tender, 30 minutes to 1 hour. Stir in tomato paste and red kidney beans. Cook until flavours combine, about 30 more minutes.

Step 4: Serve

Serve the stew together with the perfect steamed Persian rice (Chelo). Discard dried limes before serving. Enjoy your meal.
