I traveled to Jordan and Israel in 2018 and my passport has only an entry stamp in Jordan. I have read that if you visited Israel over 6 months ago, there will be no problem with entering Iran. Can anybody confirm this?

Those who have Israel stamp on their passport can not enter Iran for 6 months. But if it is over 6 months there will be no problem.
If you have just a Jordan stamp on your passport it will not cause any problem since there is no tension between Iran and Jordan.
If your visit to Israel is less than 6 months your visa to Iran will be rejected. But if it is more than 6 months and there is an Israel stamp on your passport the entrance officer will ask you some questions.
Iran just like Israel will not stamp your passport. So you will not face any problems in the future if you wish to travel to Israel or USA.
