Shir Berenj or Persian rice pudding is made of Rice and milk.
What are the Ingredients?
- 1 cup Persian rice
- 4 cups cold water
- ¼ tsp salt
- 5 cups whole milk
- 3 tbsp rosewater

How to prepare Shir Berenj?
Step 1: Preparing Ingredients
Rinse and soak the rice from the night before.
Drain and crush the rice grains with your hand so that they will mash sooner.
Step 2: Cooking Rice
Put the rice in a pot, and add 4 cups of water and some salt. Bring it to a boil, reduce the heat, and let it cook uncovered for 30 minutes or until the rice grains become creamy. Most of the water will be evaporated.
Step 3: Preparing and Adding Milk
In a saucepan bring the milk to a boil, and turn off the heat.
Gradually add the milk to the rice (2 cups each time), when the mixture thickens add 2 more cups of milk. Let it boil over medium to low heat.
Add the last cup of milk and rose water, stirring occasionally, and let it cook for another 10 minutes till the pudding turns thick and creamy.
Step 4: Refrigerating the Pudding
Turn off the heat, ladle the pudding into separate serving bowls, garnish and let them cool at room temperature.
Then refrigerate the pudding for at least 1 hour. It will be thicker and creamier after refrigerating.
*This pudding can also be served hot.
Step 5: Serve
Serve it with any toppings you like.
