Adassi, is a nutritious Iranian soup rich in protein made with green lentils and turmeric.
What are the Ingredients?
- 500g green lentils
- 2 onions
- 2 tsp turmeric
- 40g flour
- 1 cube vegetable broth
- 2 liters water
- salt and black pepper

How to prepare Adassi?
Step 1: Preparing Ingredients
Rinse the lentils.
Dice the onions.
Step 2: Cooking Lentils
Put the lentils into a pot. Pour 2 liters of water and a cube of vegetable broth. Bring it to a boil, put the lid, lower the heat and let it cook for 20-30 min.
Step 3: Preparing Onions
Put some oil in a frying pan. Add the onions and stir fry until the onions become soft and lightly brown. Add the turmeric powder and flour and stir to mix them with the onions.
Step 4: Mix Ingredients
Now it is time to add the mixture of onions to the cooked lentils. The flour will thicken the soup and give it a velvety side. Add salt and pepper. Let it simmer over low heat for 10 to 15 minutes until thickened.
Step 5: Serve
Ladle the soup in a big bowl and garnish it with Greek yogurt, and some herbs like parsley, and coriander. Serve with lemon juice and Iranian flatbread.
