Borani Bademjaan is a vegan Iranian side dish made of eggplants, yogurt, and garlic. It is better to grill the eggplants in the oven or on a charcoal barbeque rather than cook them.

- 200g natural yogurt
- 4 cloves of garlic
- salt and pepper

How to prepare Borani Bademjan?

Make a few slits on each of the eggplants to let them steam out and prevent bursting in the oven.
Grate or mash the garlic.
Crush and roast the nuts.
Rinse and pat dry the mint.
Step 2: Preparing Eggplants
Put the eggplants in the preheated oven at 350 degrees Fahrenheit for about 40 minutes or until tender. Take them out of the oven and let them cool.
Peel and smash the eggplants in a bowl.
Step 3: Mix Borani
Mix and stir the mashed garlic with the eggplants. Add yogurt, salt, and pepper if needed.
Step 4: Serve
Scoop the mixture into a bowl and garnish with a few fresh mint leaves, some toasted walnuts, red pepper, and a drizzle of olive oil.
Can be served with Lavash or Barbary bread.
