Kabab Chenjeh

This delicious traditional Persian kebab is made with lamb or beef, through a skewer, and grilled over charcoal barbeque. It can be served with Iranian flatbreads or Persian steamed rice (Chelo).

 

What are the Ingredients?

  • 1kg lamb or beef
  • 200 g fat to enhance the flavor
  • 3 big onions
  • 4 tbsp lime juice
  • 2 tbsp Olive oil
  • Salt and pepper

Baste

  • 4tbsp butter
  • 4tbsp brewed saffron

Garnish

  • 8 tomatoes
  • 4 green hot peppers
  • 2 onions
  • fresh herbs
  • lime
  • sumac

How to prepare Kabab Chenjeh?

Step 1: Preparing Ingredients

Rinse and pat dry the meat and chop it into equal cubic pieces. The even size of the chopped meat results in better and quicker grilling.

Grate the onions and squeeze them well. Collect their juice in a big bowl and discard the grated onions.

Brew saffron.

Step 2: Marinating

Add salt, pepper, lime juice, and olive oil to the bowl. Put in the chopped lamb and toss to marinate. Put the mixture in a covered container and keep it refrigerated for a minimum of 6 hours to a maximum of 24 hours.

 

 

Step 3: Skewering and Grilling

Leave the marinated meat out for about 15 minutes prior to grilling.

Thread the chopped lamb on metal skewers. Better to put 2 or 3 slices of fat between chopped meat through each skewer while skewering. Grill them over charcoal barbeque and flip them a few times to have an even grilling. Kabab Chenjeh should be nicely seared on the outside but pink and juicy on the inside.

Skewer the tomatoes, and peppers as well and grill them over barbeque as an accompaniment to Kabab Chenjeh.

 

Step 4: Preparing Baste

Melt 4 tbsp of butter in a saucepan over very low heat. add brewed saffron. Baste Chenjeh using a brush after grilling.

 

 

 

Step 5: Serve

Put  Kabab Chenjeh on a platter, and garnish with grilled tomatoes, grilled peppers, fresh onion, fresh herbs, and lime.

You can either serve it with perfect steamed Persian rice (Chelo) or with Iranian flatbread.
