Kabab Koobideh

Kabab Koobideh is the most popular kebab among Iranians. This Kebab is made of ground meat and onion, served with grilled tomatoes and Chelo or Iranian flatbread.


What are the Ingredients?

  • 800g mixture of ground beef and lamb
  • 2 onions
  • 1 tbsp turmeric
  • salt and pepper
  • 3tbsp brewed saffron


  • 1 tbsp sumac
  • 8 tomatoes
  • 2 onions
  • fresh herbs
  • lime

How to prepare Kabab Koobideh?

Step 1: Preparing Ingredients

Grate the onions and squeeze them to remove the excess water.

Brew saffron.

Step 2: Mixing Ingredients

In a large bowl mix the ground meat with the squeezed onion, turmeric, salt, and pepper. Knead the mixture for about 10-15 minutes, add 3 tbsp of brewed saffron and mix well again. Put the mixture in a covered container and place it in the fridge for a minimum of 60 minutes or a maximum of 24 hours. Chilling helps to firm up the mixture and makes forming kababs easier.


Step 3: Skewering and Grilling 

Make 8 Kabab Koubideh by pressing a handful of the meat mixture well to barbecue skewers. Pinch the meat with your fingers throughout the skewer every inch to give them shape. Grill them on a charcoal barbeque. Turn them in every 10 minutes for an even grilling.

Skewer the tomatoes as well and grill them over barbeque as an accompaniment to Kabab Koubideh.


Step 4: Serve

Put Kababs on a platter, sprinkle some sumac, and garnish with grilled tomatoes, fresh onion, fresh herbs, and lime.

You can either serve it with perfect steamed Persian rice (Chelo) or with Iranian flatbread.
