How to prepare Kabab Tabei?
Step 1: Preparing Ingredients
Grate the onions and squeeze them to remove the excess water.
Brew saffron.
Slice the tomatoes.
Step 2: Mixing Ingredients
Mix all the ingredients in a bowl and knead for a few minutes. Put the mixture in a covered container and place it in the fridge for 30 to 60 minutes. Chilling helps to firm up the mixture and makes forming kababs easier.
Step 3: Frying
Heat some oil in a frying pan. Grab a handful of the mixture and shape it into a patty. Place the patties in the oil and fry both sides until golden brown.
Gently take them out of the pan and put them on kitchen paper to remove the excess oil.
Fry the tomatoes as well.
Step 4: Serve
Put the patties on a platter, and garnish with fried tomatoes, fresh herbs, and lime.
It can be served either with perfectly steamed Persian rice (Chelo) or Iranian flatbread.
