Kashk-e-Bademjan

Kashk-e-Bademjan is one of the most delicious Iranian dishes made with fried eggplants and kashk which is a traditional Iranian salty dairy product obtained from cooked and drained buttermilk.

 

What are the Ingredients?

  • 6 or 7 eggplants
  • 1 onion
  • 4 cloves garlic
  • 2tbsp dried mint powder
  • 2tbsp crushed walnuts
  • 5tbsp kashk
  • water
  • oil
  • salt
  • pepper
  • turmeric

  • golden fried onions
  • fried mint
  • crushed walnuts
  • brewed saffron

How to prepare Kashk-e-Bademjan?

Step 1: Preparing Ingredients

Peel the eggplants and cut them in half. Put them in salty water for half an hour to remove the bitterness. Drain, rinse and pat dry.

Dice the onion.

Mash the garlic.

Brew saffron

Step 2: Preparing Eggplants

Fry the eggplants on both sides. Put them on a kitchen towel for 10 minutes to remove the excess oil. Put them in a pot, add some boiling water and let them cook for 10 to 15 minutes. Drain and put them in a bowl and mash them using a fork.

 

Step 3: Preparing Other Ingredients

Heat 2 tbsp of oil in a small pan. Turn off the heat and add the dried mint. Stir and put it in a small bowl so that it cools down faster and does not over-fry. Set aside.

Heat 2 more tablespoons of oil in a frying pan over medium-high heat. Cook and stir diced onion until deep golden brown, 10 to 15 minutes. Stir in the turmeric, and salt for 1 to 2 minutes.

 

Step 4: Mix Ingredients

Add the mashed eggplants to the fried onion and garlic. Stir fry the eggplants for a few minutes. Add fried mint, crushed walnuts, and kashk. Add some salt if needed.

 

Step 5: Serve

Scoop on a deep plate, and garnish with golden fried onions, fried mints, crushed walnuts, and brewed saffron. Serve with Iranian flat bread like Lavash or Barbary and fresh herbs.
