Khoresh-e Fesenjān is a delicious traditional sweet and sour Persian chicken stew made with walnuts and pomegranate molasses.
What are the Ingredients?
- 4 chicken drumsticks(with bones)
- 1onion
- ½tsp turmeric
- 2 cups walnuts
- 1cup pomegranate molasses
- 1tbsp sugar
- 1/2 tsp cardamom powder (optional)
- A few pomegranate seeds(to garnish)

How to prepare Khoresh Fesenjan?
Step 1: Preparing Ingredients
Dice the onion.
Toast the walnuts in a pan or on a baking sheet in the oven for a few minutes. Let them cool.
Step 2: Preparing Chicken
Heat 2 tablespoons of oil in a large pot over medium-high heat. Cook and stir the onions until deep golden brown, 10 to 15 minutes. Stir in the turmeric, salt, and pepper for 1 to 2 minutes. Add chicken drumsticks; fry until coated in turmeric and browned on all sides, 5 to 10 minutes. Add water, bring it to a boil, cover and let it cook for 30 to 40 minutes.
Step 3: Preparing Walnuts
Grind the roasted walnuts using a food processor.
Step 4: Mix Stew ingredients
Add the walnut powder, pomegranate molasses, sugar, and cardamom to the chicken. Cover and simmer over low heat for an hour. Stir occasionally to ensure that walnuts do not stick to the bottom. Adjust the taste with salt and sugar if needed.
Step 5: Serve
Scoop Khoresh Fesenjan in a deep plate and garnish with pomegranate seeds. Serve with perfect steamed Persian rice(Chelo).
