Kotlet (Cutlet)

Meat cutlet is one of the most popular dishes for dinner and lunch in different cities of Iran. Some people believe that no two cutlets in the world taste the same, and the taste of cutlets is unique like fingerprints.

Kotlet, the Iranian spicy croquettes made of mashed potatoes and minced meat are crispy on the outside and juicy on the inside.

 

What are the Ingredients?

  • 200g minced beef
  • 300g potatoes
  • 1 onion
  • 2 eggs
  • 1 tsp turmeric
  • 1/2 tsp cinnamon
  • salt
  • black pepper
  • 2-3tbsp all-purpose flour
  • 110g breadcrumbs
  • vegetable oil

How to prepare Kotlet?

Step 1: Preparing Ingredients

Boil the potatoes, let them cool and grate them in a big bowl. You can also use raw potatoes but you have to squeeze out all the excess liquid after grating.

Grate the onion, and squeeze out all the excess liquid.

 

Step 2: Mix Ingredients

Add the onion, minced beef, turmeric, salt, and pepper to the potatoes, and mix. Put in the eggs and mix. Add a few tablespoons of all-purpose flour and knead them until consistent texture.

 

Step 3: Frying Kotlets

Pour some oil into a pan over medium heat.

Spread bread crumbs on a plate. Grab about 2 tablespoons of the mixture, roll it in the bread crumbs and shape it into a patty. Repeat with the remaining mixture.

Place the patties in the oil and fry both sides until golden brown.

Gently take them out of the pan and put them on kitchen paper to remove the excess oil.

 

Step 4: Serve

Serve with flatbread like Lavash or Sangak, pickles, tomatoes, lemon, fresh herbs, and Mast-o-Khiar.
