Kuku Sabzi is easy to make Persian appetizer made of fresh herbs, eggs, walnuts, and barberries fried in a pan.
What are the Ingredients?
- 2 bunches of fresh cilantro
- 1 bunch dill
- 1 bunch parsley
- 1 bunch chives
- 2-3 lettuce leaves
- 2 tbsp barberries
- 1/2cup walnut
- 5 eggs
- Salt
- Pepper
- Turmeric
- 2tbsp all-purpose flour
- Oil ( for frying Kuku)

How to prepare Kuku Sabzi?
Step 1: Preparing Ingredients
Finely chop the herbs and lettuce leaves.
Crush the walnuts.
Soak the barberries for half an hour, rinse and drain.
Beat the eggs in a bowl.
Step 2: Mixing ingredients
Mix all the ingredients in a big bowl.
Step 3: Frying
Heat some frying oil in a 20cm non-stick frying pan. Pour in the mixture and fry over medium to low heat for about 10 minutes or until browned. Divide Kuku into 4 pieces and carefully turn each piece to brown the other side.
Step 4: Serve
Put Kuku on a serving platter. Garnish with pickles, fresh tomatoes, and limes.
Serve with Iranian bread.
