Mahicheh is lamb shank in Persian. This delicious traditional dish is usually served with Persian steamed rice ( Chelo) or Baghali polo.
What are the Ingredients?
- 4 lamb shanks
- 2 onions
- 6 cloves garlic
- 1 small carrot
- 4 tbsp oil
- 1 cinnamon stick
- 1 tsp turmeric
- 1/2 tsp saffron
- salt and pepper

How to prepare Mahicheh?
Step 1: Preparing Ingredients
Dice the onions.
Mash the garlic.
Brew saffron.
Step 2: Cooking Lamb Shanks
Heat 4 tablespoons of oil in a large pot over medium heat. Cook and stir the onions until deep golden brown, 10 to 15 minutes. Stir in the garlic, turmeric, salt, and pepper for 1 to 2 minutes. Add lamb shanks; fry until coated in turmeric and browned on all sides, 5 to 10 minutes. Put in the cinnamon stick and carrot. Add boiling water, cover the pot, and let it cook for 1 hour.
Then remove the cinnamon stick and carrot, turn the shanks, add brewed saffron, put the lid back on, and let it cook for another 45 to 60 minutes until fat and oil move to the surface. The less water in it the more delicious it will be.
Step 3: Serve
Put the shanks on a platter, and garnish with fresh herbs and lime.
Serve with perfect steamed Persian rice (Chelo) or Baghali Polo.
