Mirza Ghasemi, a delicious Iranian appetizer, is made of smoked eggplants, tomatoes, garlic, and eggs.
What are the Ingredients?
- 6 eggplants
- 6 tomatoes
- 3 eggs
- 1 plant garlic
- 1 tsp turmeric
- salt and pepper
- vegetable or olive oil

How to prepare Mirza Ghasemi?
Step 1: Preparing Ingredients
Make a few slits on each eggplant to let them steam out and prevent bursting in the oven.
Grate or mash the garlic.
Crush the nuts.
Rinse and pat dry fresh herbs.
Step 2: Preparing Eggplants
Grill the eggplants on a barbeque, over stove flame, or in the oven over high heat.
Let them cool, peel them and remove their head(stem).
Smash them and set them aside.
Step 3: Preparing Tomatoes
Boil some water in a pot, and put the tomatoes in for 2 minutes. Drain and put them in cold water.
Peel their skin.
Finely chop the tomatoes and set them aside.
Step 4: Mix Ingredients
Saute the garlic in a frying pan. Add turmeric and salt.
Add the eggplants and tomatoes to the pan and stir fry until the tomatoes are dried out. Pour some oil if needed.
Step 5: Adding Eggplants to the Mixture
Beat the eggs. Reduce the heat. Make a few holes in the mixture and pour the eggs into the holes. Wait for 4-5 minutes and then stir to mix the eggs with the eggplant mixture. Let it cook over low heat for 15-20 minutes, stirring occasionally.
Add salt and pepper if needed.
Step 6: Serve
Scoop Mirza Ghasemi on a deep plate and garnish with crushed nuts and fresh herbs.
Serve this dish with Iranian flatbread like Lavash, Sangak, or Barbari.
