Ranginak is a fabulous traditional Iranian sugar-free dessert with dates stuffed with walnuts.
What are the Ingredients?
- 30 soft dates
- 1 cup walnut quarters
- 8 tbsp unsalted butter
- 2 tbsp vegetable oil
- 1 cup all-purpose flour
- 1/2 tsp ground cinnamon( optional)

How to prepare Ranginak?
Step 1: Preparing Ingredients
Pit the dates using a knife, but make sure not to cut them in halves.
Step 2: Stuffing Dates
Stuff the dates with 1 or 2 walnut quarters, and arrange them on a platter in a single row.
Step 3: Preparing Batter
Melt the butter in a saucepan over low heat, and add the vegetable oil to avoid butter burning. Add the flour and stir continuously for about 15 minutes until deep golden brown. It should smell nutty and thicken slightly. Do not overcook the flour as it can burn and become bitter.
Step 4: Serve
Spoon the hot batter over the dates and sprinkle some cinnamon powder if you wish. Let it sit for 10 minutes. Garnish with pistachios, shredded coconuts, sesame, or rose petals.
