Sholeh Zard, a sweet Iranian rice pudding is made of Persian rice, saffron, sugar, and rose water.
What are the Ingredients?
- 250g white rice
- 500g sugar
- 125g butter
- 1 tsp saffron
- 1cup rose water
- 50g flaked almonds
- 2liters water

How to prepare Sholeh Zard?
Step 1: Preparing Ingredients
Rinse and soak the rice from the night before.
Drain and crush the rice grains with your hand so that they will mash sooner.
Brew saffron.
Step 2: Cooking Rice
Put the rice in a pot, and add 2 liters of water and some salt. Bring it to a boil, reduce the heat, and let it cook uncovered for 30 minutes or until the rice grains become creamy. Add some boiling water if needed.
Step 3: Mixing Rice and Sugar
Add 400g sugar, stir constantly.
Taste and add some more sugar if needed.
Step 4: Mixing Other Ingredients
Gradually add brewed saffron and stir until it reaches the desired color.
Add butter, flaked almonds, and rose water.
Let it boil over low heat for 40 minutes or until the pudding turns thick and creamy.
Step 5: Refrigerating Sholeh Zard Before Serving
Turn off the heat, ladle the pudding into separate serving bowls, and let them cool at room temperature.
Then refrigerate the pudding. It will be thicker and creamier after refrigerating.
Step 6: Serve
Garnish with your desired topping. Serve chilled.
