Zeytoon Parvardeh is a really delicious Iranian appetizer and can be served as a side dish or with a cheese platter.
What are the Ingredients?
- 300g green olives
- 4 tbsp crushed walnuts
- 3 tbsp fresh mint
- 2 tbsp pomegranate molasses
- a small handful of pomegranate seeds
- 2 tbsp olive oil
- 2 or 3 cloves of garlic
- 1teasp angelica seed powder

How to prepare Zeytoon Parvardeh?
Step 1: Preparing Ingredients
Pit the olives.
Crush the walnuts.
Cut and seed a pomegranate.
Peel and smash the garlic cloves.
Step 2: Preparing Marinade
In a bowl mix the crushed walnuts, mashed garlic, angelica seed powder, and pomegranate seeds, and incorporate pomegranate molasses and olive oil.
Step 3: Marinating Olives
Add the pitted olives into the bowl and mix. Cover the bowl and put it in the refrigerator for at least 24 hours.
You can keep it in the refrigerator for a month.
Step 4: Serve
Scoop Zeytoon Parvardeh in a small bowl or plate. Garnish with a few pomegranate seeds and a drizzle of olive oil.
